How do you manage a full section when everything hits at once?
Talk about consolidating trips, prioritizing by course timing, and telling tables honestly when something will take a moment. Grace under load is the test.
How do you handle questions about allergens?
Say you never guess: you know the menu's common allergens and confirm with the kitchen for anything uncertain. This is a safety answer, not a service one.
What is your approach to suggesting appetizers, wine, or dessert?
Describe recommending things you genuinely like, reading the table's pace, and never pushing. Natural suggestion outsells scripted upselling.
Tell me about your most difficult guest and how it ended.
Keep the story short and calm: you listened, fixed what you could, and stayed professional. The retelling itself demonstrates the skill.
What POS systems have you used, and how fast are you on them?
Name them, and mention modifiers, split checks, and comps. Fluency here directly affects table turns.
