Interview questions worth rehearsing

With the thing the interviewer is actually listening for

How do you handle a guest who has had too much to drink?

Show the professional sequence: slow service, offer water and food, cut off respectfully, involve a manager if needed. This answer can decide the interview.

Make me an old fashioned. Talk me through it.

Know your classics cold: spec, technique, glassware, garnish. Narrating calmly while you build is exactly what a service test looks like.

How do you keep up when the bar is three deep?

Talk about sequencing multiple orders, batching steps, acknowledging waiting guests, and staying consistent on pours instead of getting sloppy.

What is your approach to checking IDs?

Say plainly that you check anyone who looks under a threshold, every time, and know the state's acceptable forms. No exceptions for regulars.

How do you handle cash and end-of-night reconciliation?

Describe accurate ringing, no unrecorded comps, and clean drawer counts. Owners are listening for honesty around shrinkage.

Tell me about building regulars at a previous bar.

Give a specific habit, like remembering names and drinks or making a genuine recommendation. Regulars are revenue, and they know it.
